Tasty Tuesday

Since the weather is still a little cooler I thought a recipe for Tasty Tuesday would be good.

Taco Soup:
1 lb. hamburger
1 med. onion
1 pkg. taco seasoning (I use mild)
1 (16oz.) can cut corn, with juice
1 (16oz) can kidney beans, drained washed
1 (28 oz) can stewed tomatoes
1 (8 oz) can tomato sauce
Grated cheese
Doritos or tortilla chips
1-2 cups water (optional) (I don't add unless I want it more soupy)
sour cream

Fry hamburger and onions together, cook til done, drain. In a large pan add hamburger, onions, taco seasoning, corn, kidney beans, tomatoes and tomato sauce. Bring to a boil, turn down and simmer. Spoon into a bowl, add cheese and crushed chips. Top with sour cream.







What's soup without homemade french bread.




My Grandma uses this recipe. Her bread is divine. One day I hope mine will turn out like hers. She says the secret is to not rush the bread.
French Bread
1/2 cup warm water
2 TBS yeast (2 pkg.)
3 TBS granulated sugar
1 TBS salt
1/3 cup vegetable oil ( I use canola)
2 cups very hot water
6 cups flour
Dissolve yeast and sugar in 1/2 cup warm water. In a large bowl, combine salt, oil and 2 cups of hot water. Mix in 3 cups of flour. Add the yeast mixture. Mix in remaining 3 cups of flour. Stir down dough every 10 minutes for 50 minutes. Shape into 3 small loaves or 2 large loaves. Place on cookie sheets or french bread loaf pans sprayed with vegetable spray. (I sprinkle corn meal on the bottom) Let rise til double. Bake at 400 degrees for 15 to 20 minutes. Cool on rack.

My grandma uses an egg wash over the top and also slits the top with 3 slits. Then lets rise again. I haven't figured that out very well because it doesn't rise as much as before but maybe I'm rushing it.
Love the bread though. It lasts only a day in my family with 3 boys.

  2. Yum!! Those recipes look great. I will have to try the soup before it gets too warm out! Just finished eating corned beef and cabbage for dinner...and green beer!!
